Meals that slap

I'm up to four slaps in a row and I am getting nervous about my streak here.

The teriyaki chicken that subbed for leftovers (of which there were not enough) was left out of the equation, but aside from that, I've made four meals in a row that met Linnea's "that slaps!" seal of approval.

FTR: chicken lo-mein, bulgogi with rice, pork chops (*) with roasted potatoes and brussel sprouts, and last night's green chile chicken enchiladas (**).

(*) Plain old pork loin chops, but I didn't trim the fat off and Linnea loves fat on her meat. Blech.

(**) I'd never made them before, at least not with green chile, previous green-based enchiladas were the recipe from MIL with cream of mushroom soup, and green chile added on top. Dh suggested trying some sour cream inside the enchiladas next time and Linnea. Lit. Into. Him. about how you never EVER criticize the cook who makes your food, not at a fast food joint, not at a restaurant, not at home. Dh vainly tried to tell her that it was the first time I'd made the dish and would want the feedback but she was adamant. LOL. Next time sour cream.

Anyhow.

Tonight's dinner was supposed to be chili (all beans) but dh and I agreed that nobody felt like it so I didn't soak the beans last night. I'll have to find a slappy sub.

I don't like green chiles. Like all peppers, there is a bitter taste for me that overwhelms everything else, even the hot.
