Another week. Meh.
Monday: roast pork and potatoes (*)
Tuesday: chicken, broccoli, rice (boring....) with mushroom cream soup based sauce. Yeah, except that I'm making the soup base, right? Heh. Linnea said she'd prefer a can, and volunteered to walk to the store to get one.
Wednesday: leftovers
Thursday: salade niçoise (potato salad with vinaigrette and green beans, hard boiled eggs, olives, capers, tomatoes, and tuna)
Friday: polenta aked with eggs, corn, tomato, and fontina (from the new Smitten Kitchen cookbook)
Saturday: matar paneer with naan
Sunday: strata with applewood smoked bacon, onions, apples, and poppy seeds.
(*) Can I saw how much I detest the whole "sheet pan dinner" fad that I'm sure someone is making $$ off of.... I mean, this is something most cooks I know do: you OMG, cook meat, potatoes, and sometimes a veg in a 9x13. But, since it's not a sheet pan? Just... yech.

Date: 3 Feb 2018 06:41 (UTC)And yeah, I hear you on what does NOT get eaten on a regular basis, but DOES get eaten while camping. Linnea's bestest shopping trip of the year is the one I go on before our yearly camping trip, when all sorts of salt-laden packaged stuff is purchased! I WILL admit that Velveeta shells and cheese with some ham steak (frozen when we left, defrosted in the cooler...) is a pretty fine dinner after a day hiking and playing outside!
Linnea decided that my homemade mushroom sauce would be ok when she saw how rainy it was outside...... It always makes me laugh at how much she loves processed foods. I don't use them in the house, but my MIL and her BFF's family do.
Sorry, blathering away here. Long day.
