A little bit late on posting this. The pancake dinner is a request from Linnea, for after her regatta... two weeks ago.
Wednesday: leftovers
Thursday: pancakes, bacon, eggs, fruit salad
Friday: pork tenderloin, potato salad with vinaigrette, green beans
Saturday: leg of lamb, roasted potatoes, more green beans. (*)
Sunday: pasta with tomato sauce doctored with extra mushrooms and probably ground beef. (**)
Monday: mapo tofu with rice and steamed broccoli (***)
Tuesday: leftover lamp with barley and veggies.
(*) We buy leg of lamb from Costco... it's too big even when I have a few people over, so I usually carve off about 1/4-1/3 after marinating in red wine and garlic etc, and freeze it.
(**) Linnea has a regatta in Portland, so David and I will be leaving the house at 4am to get her to the team buses that will take them down. We'll follow, and I expect we will not be back until late. I'll get the sauce made Saturday so all I have to do Sunday is boil water for pasta.
(***) The mapo tofu will be served with broccoli if I have to resort to supermarket black bean sauce. If I have time to get to the Asian grocery, it'll be served with gai lan. Mmmm... gai man.
We're eating a lot more meat than we used to... I mean, it used to be once or twice a week, then two three times, and now pretty much every day. But with two kids rowing, they're hungry.
