Good chicken recipe
6 Jan 2023 18:05Made this last night. While I'm a decent cook, roast chicken has never been something I'm particularly good at, but from time to time I like to try.
The usual problem is of course that most of the better recipes call for a "3.5 lb chicken". LOL. All the stores around here laugh at that 3.5 lb chicken and sell chickens that are at the very clear 5lbs, if not more.
I did find a 4 lb chicken, organic, Trader Joe's, but it was the smallest of the half dozen or so they had, so.
But seriously, as some of the comments have suggested, the sauce here is simple and delicious, a pop of salt and tart.

I will certainly be making it again, in hopes of improving my chicken roasting technique. I made it with roasted potatoes and onions (in the other oven).
We'll have some leftovers in sandwiches tomorrow, I think, and then probably one more set as a stew, I suspect I'll have enough.
But that sauce, OMG.
