Found yeast at Trader Joe's. I hadn't seen it there in... well, forever. They'd sometimes have the little packets around the holidays, but this was a full 1lb of SAF.

I feel like I can take on this epidemic!

Plan: make foccaccia tomorrow evening for dinner Monday.

Woohoo! I've just run out of bread flour and I can't find more. Yeast I've got plenty of. AP flour too. I guess I could just add a tbl or so of vital gluten to the AP flour and see what happens.

While Matthew prefers King Arthur bread flour, he is able to successfully make bread from KA all purpose flour (and perhaps also Trader Joe's AP flour?).

I saw a mention recently of focaccia needing only a teeny bit of yeast. If that is true, you're set for a long time with 1 lb!
