OK. If I get the menus done, I'm in better shape for the week. I have to remind myself of this!
Monday: corn casserole
Tuesday: leftovers...
Wednesday: beef (*) stroganoff with lots of mushrooms and flat noodles
Thursday: taco (*) salad
Friday: buttermilk chicken (*) with roasted potatoes
Saturday: yellow curry with turkey meatballs over rice
Sunday: hashbrowns (*), breakfast sausage (*), mushrooms, and onions. With eggs as a casserole depending.
The corn casserole that was supposed to be made last night... didn't. Because Amtrak, and just getting home late after the regatta, hungry, and tired. I'll make it tonight, and this week, I have to have two meals with sour cream. Well, light sour cream. I always buy that. I truly do not like the taste of full fat dairy products and full fat sour cream is not something I'd ever eat or buy by choice. I even bake with the light stuff, which still has some fat, and have never noticed a difference. Anyhow, it'll be used in beef stroganoff, which despite Linnea's best hopes, is not made with cream of mushroom soup! :-)
Starred items are from the freezer, I'm starting to empty the freezers before the holiday cooking rush. Some time in early November, the fridge will get a full clean out and it'll kill me, but I'll toss the condiments that don't deserve shelf space. Drives me nuts to do it, it's such a waste, but OTOH, if I don't use them, why am I keeping them, huh?
I love Trader Joe's chicken breakfast sausage, but, at least at my Trader Joe's, they always have very close expiration dates. So I buy them and toss them in the freezer. And forget that they are there. I think I have three packages in there, so it's time to start cooking them. I saut&eactute; them with onions and mushrooms, and serve them with hashbrowns. Depending on how hungry we are, I might add eggs and bake. The advantage to that is that it becomes easy lunches for the following week.
With just dh, Linnea, and me to feed, it's hard to muster the energy for dinner. Linnea gets home tired and hungry after rowing and if dinner is not pretty much ready, she'll just have snacks from the fridge and go to bed, so a plan is essential. I hate spending time thinking about this, but when I go back and read my posts with menus tags, I find these stupid posts useful. Heh.
We've had beautiful fall weather over the past week or so, and it's so nice. It's not too hot out, and the skies are deep blue. I love this time of year. I wish we could get out hiking, but our schedule is jam packed over the weekend, and I'm not seeing it happen. I do get out to my local wildland park a few times a week, and I've been happily taking photos of mushrooms, of which there are loads this year.
And Linnea grew another 1/4 in. Not much, of course, but it puts her at 5ft and 1/4 in, which is over 5ft. She's thrilled!
Ah well. On to the other tasks of the week....
