Monday menus blah.
8 Oct 2018 15:02Yesterday Perry had a regatta. Had to get up at 4am. Didn't get to bed, what with things, until late last night... Linnea had been having some anxiety issues all evening, so I probably shouldn't have been surprised that she showed up in my bedroom, in tears, and wanting to sleep with us. Of course. She glommed onto me, like baby Linnea used to as well.
But OMG. I was stuck close on both side, one with a kid at the edge of the bed, on the other, a spouse who would. not. budge. Under a duvet -normal- AND a blanket.
I about died of heat.
I finally managed to get dh to move a bit, get out from under the duvet at least, but while now I could turn over in bed, it wasn't comfortable.
So needless to say, not much sleep was had by me, grr. But Linnea did sleep, and she's on a bit of a more even keel today.
I tried lazing around in bed an extra hour or so thing morning, before admitting to myself that reading in bed was not going to make me any less tired so I got up and went on my tromp through the woods, which did help.
But here I am. I've been working on some microscope data, it's 3pm and I'm exhausted.
OTOH, I made menus for the week. However, like how I feel, they're pretty blah. They'll get us through, though, and at this point, that is all I care about.
Monday: potenta with garlicky spinach and a fried egg.
Tuesday: leftovers
Wednesday: out (we're going to Bellingham to meet with our financial person. She's planning on taking us to lunch, I think, and we're planning on taking Perry to dinner. Oh. More on a Perry dinner funny later).
Thursday: chicken with rosemary, olives, and grapes. A Smitten Kitchen recipe. Yum. With mash, probably.
Friday: penne with tomato sauce, with mushrooms and chicken Italian sausage. The pound of sausage should make enough sauce to freeze for a future meal.
Satuday: panko chicken wraps.
Sunday: corn casserole. This is the recipe that calls for corn, creamed corn, and Jif cornbread mix. I've modified it to not be quite the artery clogging mess. I usually add sauteed onions, and dh will have his with green chili salsa. Linnea has asked for breakfast sausage with. She has a regatta that day, and it's going to be a long affair, so I needed some that I could make quickly. I don't have a good repertory of crockpot meals that people like, so this is a good compromise.
Perry dorm food funny. He seems to be doing more or less ok with dorm food. Except for one thing. We eat late. I never got used to the American habit of early dinners, and 8:30pm has been pretty standard for us as dinner time, or later if kids got home later. So Perry pretty much misses dinner in the dining hall every evening, because 7pm is Too Early for him to be thinking about dinner. Of course, that means he goes to the "late night" meal, which appears to be fries and chicken nuggets. He's just appalled that he's expected to eat before 7pm (in all our years of kids, even since Anne-Chloe started gymnastics, we have never had all kids home by 7pm!).
Alas, now that I have my menus planned, I have to go shop for the food to actually make the meals.
