Not really on topic, but last weekend I took at baking class through Zingerman's. I asked about the lemon zest we used, because the texture was nothing like what I get with my zester so i wondered how they did it. Turns out they order it in bulk from France, to avoid wasting the lemons (or maybe it was oranges? either way).
